There is no one "right" way to eat that suits everyone and paleolithic humans thrived on a variety of diets, depending on what was available at the time and where in the world they lived. Some ate a low-carb diet high in animal foods, while others followed a high-carb diet with lots of plants.
Consider the list below of foods to eat and not to eat as a general guideline, not something written in stone. You can adapt all of this to your own personal needs and preferences. It should however be mentioned that subscribing to a paleo diet is controversial as researchers are debating whether or not it's safe and healthy. Someone who is interested in the diet should do some individual research to verify if it is suitable for him/herself.

The Paleo (paleolithic) Diet is designed to resemble what human hunter-gatherer ancestors ate thousands of years ago. It is therefore also called the caveman diet or the stone-age diet. Although it’s impossible to know exactly what human ancestors ate in different parts of the world, researchers believe their diets consisted of whole foods. By following a whole food-based diet and leading physically active lives, hunter-gatherers presumably had much lower rates of lifestyle diseases, such as obesity, diabetes and heart disease. These are the basics:
Eat: Meat (beef, lamb, turkey, pork, etc.), sea food (wild caught: salmon, trout, haddock, shrimp, shellfish, etc.), eggs (free range), vegetables (broccoli, peppers, onions, carrots, tomatoes, potatoes, yams, turnips, etc.), fruits/ berries (apples, bananas, oranges, pears, avocados, strawberries, blueberries, acaí, camu camu, aguaje, etc.), nuts (almonds, macadamia, walnuts, hazelnuts, macambo nuts, etc.) seeds (sunflower seeds, pumpkin seeds, chia seeds, sacha inchi seeds, etc.), legumes (beans, chickpeas, lentils, peas, black beans, soy beans, peanuts, etc.), herbs (parsley, peppermint, oregano, basil, thyme, dill, sage, coriander, etc.), spices (sea salt, garlic, turmeric, rosemary, dill, etc.), healthy fats and oils (extra virgin oil, coconut oil, avocado oil, sacha inchi oil, etc.). Try to choose grass-fed, pasture-raised and organic if possible. If not, just make sure to always go for the least-processed option.
Avoid: All processed foods (if it looks like it was made in a factory, don't eat it), dairy products, bread, pasta, sugar, soft drinks, fruit juices, candy, pastries, ice cream, grains, most dairy products, artificial sweeteners, vegetable oils, margarine and trans fats.
Summary: Palaeolithic humans’ diets varied depending on availability and location. The basic concept of the paleo diet is to eat whole foods and avoid processed foods.
